Bean & Yam Chocolate Brownies - Flour-LESS!

I am SO excited to share this recipe with you!   It is amazing!  

Trust me when I say you will have NO idea the yams or beans are in this awesome recipe.  My 6 & 8 year old both despise beans - nothing I can do will make them eat it - until...BROWNIES!   Who knew?!  Of course they are none the wiser and I plan to keep it that way.  ;)

Personally I have never had a brownie that was so moist and delicious.   Best part?  It is  totally guilt free!  You get fiber, protein, antioxidants, healthy fats, vitamin A, B's, C, magnesium, calcium, iron, zinc, copper, potassium and manganese.

The raw cacao is a total mood booster helping to increase the serotonin levels in the brain.  Yup, chocolate really can make you happy!

Ingredients:

12 small yams (peeled, sliced & steamed until just soft)
1 can black beans - drained & rinsed0
1 tsp vanilla
2 eggs
1/2 cup raw cacao powder
1/4 cup ground oats (simply grind oats in a coffee or spice grinder)
1/4 cup almond meal
2 tbsp coconut oil
1 tsp baking powder
3 tbsp maple syrup
1/4 tsp sea salt
2 tbsp brewed coffee
16 medjool dates (soaked for 1 hr prior to using & pitted)

Place ingredients in a food processor & mix until smooth.   Grease a baking pan & transfer mix in.  Bake at 350 for 25-30 minutes.   

You can eat these as is (they are freaking good!), drizzle with chocolate sauce, or top them with strawberries or raspberries.   Once cooled, store brownies in the refrigerator - if they last that long!  

Chocolate Topping:

2 Tbsp coconut oil
1/4 cup cacao powder
2 Tbsp maple syrup
Optional: 1/4 cup of chocolate chips to sprinkle on top. 

Melt coconut oil on low then remove from heat.  Stir in cacao powder, and maple syrup until a smooth sauce forms.  Let cool then drizzle the sauce on the brownies (and chocolate chips if you like!).   
The sauce will harden slightly when cooled.
